Frozen French Fry Method! Prepare frozen french fries on a baking sheet as directed tossing in 1 tablespoon per half bag of your favorite melted Duck Phat first

Ingredients

 2 cups Traditional Duck Phat

 Sea salt

 Ketchup and Duck Phat Mayonnaise for dipping

Preparation

  1. Peel the sides of the potatoes, leaving some skin on the ends and place in a bowl filled with cold water as you go.

  2. Cut the potatoes into matchsticks (1/8-inch square) and place into a bowl of clean cold water. Allow the potatoes to sit for 1 hour, changing the water as it becomes cloudy to remove the starch.

  3. Heat the canola oil in a large, heavy Dutch oven or deep skillet to 325˚ F.

  4. Drain the potatoes and dry well with paper towels. Carefully add the potatoes to the oil, in batches if necessary, and cook until they just lose their opaque look and are starting to firm up, 5 to 6 minutes. Drain well on paper towels

  5. Heat 3 to 4 inches of Traditional Duck Phat in a separate heavy saucepan to 375˚ F.

  6. Carefully add the fries to the Traditional Duck Phat and cook until crispy and evenly golden, about 8 minutes.

  7. Remove to a paper towel-lined plate and season with the sea salt
